“Elevage” for 18 months in the same barrels “en sur lie” where partially malolactic fermentation took place.

Scent
On the nose it reveals great complexity, a sober and contained aroma of white stone fruits supported by a distinct minerality and vanilla notes in perfect harmony.

Vinification
Manual selection of grapes at the entrance to the winery. Total destemming, and 12 hours cold skin maceration. Gentle pneumatic pressing, followed by fermentation in light toasted French oak barrels at a controlled temperature of 15ºC.
